Ingredients

Instructions

Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a bowl, combine graham cracker crumbs with melted butter, then press firmly into the bottom of the prepared pan. Bake for 10 minutes and let it cool.

Prepare Apple Filling

  • Over medium heat, combine sliced apples with sugar, cinnamon, and lemon juice in a saucepan. Cook until tender, about 5-7 minutes, and then set aside to cool.

Cheesecake Mixture

  • In a large bowl, beat softened cream cheese until smooth, gradually add granulated sugar, and mix until combined. Add sour cream and vanilla extract, then mix well. Incorporate eggs one at a time, beating well after each addition.

Assembly

  • Pour half of the cheesecake batter over the cooled crust, spread the spiced apple filling on top, and then pour the remaining cheesecake batter over the apples.
  • In another bowl, combine flour, oats, brown sugar, melted butter, and cinnamon for the crumble topping. Toss until crumbly, then sprinkle evenly over the cheesecake.

Baking and Chilling

  • Bake assembled cheesecake for 50-60 minutes until center is set but slightly jiggly. Turn off the oven and let it cool with the door slightly open for one hour.
  • Once cooled, refrigerate for at least 4 hours or overnight before serving.
