Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Prepare the asparagus by placing it on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  • Roast the asparagus in the oven for about 10 minutes or until tender and slightly caramelized. Let it cool slightly.
  • Toss the halved cherry tomatoes with olive oil, salt, and black pepper in a bowl.

Assembly

  • On a serving plate, layer the roasted asparagus and seasoned tomatoes.
  • Tear the burrata into pieces and place them over the salad.
  • Sprinkle the toasted pine nuts and torn basil leaves on top.
  • Drizzle with balsamic vinegar and a touch more olive oil before serving.

Notes

For extra flavor, marinate cherry tomatoes in balsamic vinegar for 30 minutes. You can substitute pine nuts with walnuts or almonds, and try adding fresh mint or parsley for a twist.
