Instructions

Preparation

  • Butter one side of each slice of bread.
  • On the non-buttered sides, layer fresh mozzarella, creamy avocado, and tomato slices. Sprinkle salt and pepper. Drizzle balsamic glaze or pesto if using.

Cooking

  • Heat a skillet over medium heat.
  • Place the sandwich in the skillet, butter-side down. Grill for 2-3 minutes until golden and the cheese starts to melt.
  • Flip the sandwich and grill the other side for another 2-3 minutes until browned and the mozzarella is melty.

Serving

  • Remove from skillet, let cool slightly, then slice in half. Serve warm.
