Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • Brown the ground beef in a skillet over medium heat. Once browned, add the chopped onion and minced garlic, stirring until fragrant.
  • Stir in the taco seasoning along with 1/4 cup of water and simmer for about 5 minutes.
  • Spread a thin layer of salsa across the bottom of a 9x13-inch casserole dish.
  • Layer two tortillas over the salsa, then spread half of the refried beans and half of the seasoned ground beef mixture on top.
  • Sprinkle a handful of cheddar and Monterey Jack cheese over the first layer.
  • Repeat the layers: add two more tortillas, the remaining refried beans, the remaining beef mixture, and more cheese. Finish with a final layer of tortillas topped with the remaining salsa and cheese.

Baking

  • Cover the casserole with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for another 10 minutes until the cheese is golden and bubbly.

Serving

  • Serve hot, garnished with sour cream and chopped cilantro.

Notes

For variations, swap out lean ground beef for turkey or add black beans and corn. Pair with a fresh salad or guacamole for a complete meal.
