  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons freshly squeezed lemon juice
  • 4 cloves garlic, finely minced
  • 1/4 cup butter, cut into small cubes
  • 1 small lemon, thinly sliced
  • Freshly chopped parsley (optional, for garnish)

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Lightly grease a rectangular baking dish.
  • Arrange the seasoned cod fillets in the dish.

Mixing the Sauce

  • In a small bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, and minced garlic. Season with sea salt and freshly ground black pepper to taste.

Cooking

  • Pour the sauce over the arranged cod fillets, ensuring they are evenly coated.
  • Scatter the diced butter on top, allowing it to melt into the fish as it cooks. Add thinly sliced lemon on top.
  • Bake for 15–20 minutes or until the cod is opaque and flakes easily with a fork.

Serving

  • Garnish with freshly chopped parsley before serving hot.

Notes

To avoid overcooking cod, ensure it reaches an internal temperature of 145°F (63°C). Fresh ingredients like lemon and garlic greatly enhance flavor. Try adding herbs or other white fish varieties for variations.
