  • 3 cups fresh spinach, roughly chopped
  • 8 oz mushrooms, sliced Bursting with umami flavor
  • 1 cup shredded mozzarella cheese For stretchy, gooey texture
  • 1 cup shredded cheddar cheese Adds depth and richness
  • 4 pieces tortillas (8-inch size) Provides a crispy shell

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Microwave the mushrooms in a bowl for 2.5 to 3 minutes until softened, then drain well.
  • Brush one side of each tortilla lightly with olive oil.

Assembly and Baking

  • Place the tortillas oiled-side down on a baking sheet and scatter half of the mozzarella and cheddar evenly on one side of each tortilla.
  • Layer the spinach and mushrooms evenly over the cheese.
  • Top with the remaining cheese and fold each tortilla in half over the fillings.
  • Bake for 6 minutes, flip and bake for another 6–7 minutes until crispy and golden.

Notes

Consider sautéing the spinach for enhanced flavor. You can mix and match cheeses for different profiles and experiment with spices for depth.
