Ingredients

For the crust

  • 200 g all-purpose flour A versatile base providing a tender, flaky crust.

  • 1-2 tbsp cold water Helps bring the dough together.

For the filling

  • 200 g feta cheese Creamy and salty, whipped to perfection.
  • 75 g cream cheese Offers a rich mouthfeel.
  • 2 tbsp olive oil Adds depth to the filling.
  • 1/2 large lemon, zest Fresh aroma lifts the flavor.
  • to taste black pepper Adds a touch of heat.
  • 2 tbsp hot honey Drizzle to enhance sweetness and spice.

For garnishing

  • 50 g roasted pistachios, chopped For a delightful crunch.
  • to taste fresh thyme, optional For an aromatic touch.

Instructions

Making the Dough

  • In a large bowl, combine the all-purpose flour and a pinch of salt. Cut in the cold cubed butter using a pastry cutter until the mixture resembles sandy crumbs.
  • Add the egg yolk and cold water gradually, mixing until you form a soft dough. Wrap in plastic wrap and chill for 30 minutes.

Preparing the Crust

  • Roll out the chilled dough on a floured surface to about 3 mm thick. Press into a tart tin (20-23 cm) ensuring even distribution.
  • Prick the base with a fork to prevent bubbling and chill briefly. Preheat the oven to 180°C (350°F). Bake with pie weights for 15 minutes, then remove the weights and bake an additional 10 minutes until golden brown. Let cool slightly.

Whipping the Filling

  • In a food processor, blend the feta cheese, cream cheese, olive oil, lemon zest, and black pepper until smooth and airy.
  • Spread the whipped filling into the cooled crust, making sure it’s evenly distributed.

Final Baking

  • Place the filled tart back into the preheated oven and bake for 10-12 minutes until just set and warm throughout.

Garnishing and Serving

  • Drizzle hot honey over the warm tart before serving. Sprinkle with chopped roasted pistachios and fresh thyme if desired.
  • Slice and serve warm or at room temperature.

Notes

Do not overwork the dough. Allow the crust to cool before adding the filling. Blend feta and cream cheese well for a smoother filling.
