Instructions

Preparation

  • In a bowl, whisk together the balsamic vinegar, olive oil, brown sugar, minced garlic, dried basil, and salt until well combined.
  • Place the chicken thighs in a shallow dish and generously coat them with four tablespoons of the marinade. Reserve the rest for later.

Cooking

  • Heat a teaspoon of oil in a grill pan over medium-high heat. Once hot, add the chicken and cook until golden brown and fully cooked, about 6–8 minutes per side.
  • Remove the chicken from the grill and allow it to rest for a few minutes before slicing it into strips for easy serving.

Assembly

  • To assemble your salad, arrange the Romaine lettuce on a large plate. Add sliced avocado, cherry tomatoes, mozzarella balls, and the grilled chicken strips.
  • Finish by sprinkling sliced fresh basil over the top and drizzling with the reserved balsamic dressing. Season with additional salt and pepper to taste, then serve immediately.

Notes

Marinate the chicken for at least 30 minutes (or overnight if possible) for strengthened flavors. Consider adding nuts like sliced almonds or walnuts for crunch.
