Instructions

Preparation

  • In a mixing bowl, combine 1/4 cup of balsamic vinegar, 1/4 cup of extra virgin olive oil, 1 tablespoon of Dijon mustard, 1 teaspoon of honey, and minced garlic. Season with salt and pepper, blending well.
  • Take your 2 pounds of flank steak and coat it with half of the marinade. Place it in a large Ziploc bag or a shallow dish, ensuring it’s well-covered. Refrigerate it overnight for optimal flavor absorption.

Cooking

  • Preheat your grill to medium-high heat. Remove the steak from the marinade and grill for 3–5 minutes per side, depending on your desired level of doneness.
  • Allow the steak to rest for about 5 minutes after grilling.
  • During the last few minutes of grilling, add the cherry tomatoes to the grill. Cook until they are lightly blistered and have lovely char marks.

Assembly

  • Slice the steak against the grain for maximum tenderness. Arrange the slices on a platter and top with the grilled cherry tomatoes, diced mozzarella, and fresh basil.
  • Drizzle the remaining marinade over the top, uniting all the flavors in a luscious, cohesive dish.

Notes

Allow the grilled steak to rest before slicing to retain juices. If short on time, marinate for at least 30 minutes. Use a meat thermometer for perfect doneness.
