Instructions

Make BBQ Chicken

  • Heat the olive oil in a medium-sized pan over medium heat.
  • Add the thinly sliced red onion and sauté for about 2 minutes until soft.
  • Stir in the minced garlic and cook for another minute.
  • Add shredded chicken, paprika, Worcestershire sauce, and BBQ sauce; stir well and cook for 2-3 minutes.

Prep Garlic Butter

  • In a microwave-safe bowl, combine butter, minced garlic, and chopped parsley. Microwave until melted (about 30 seconds).
  • Spread the garlic butter on one side of each slice of bread.

Assemble Sandwiches

  • Flip bread slices so the buttered side is down. On 6 slices, add a layer of Havarti cheese, a spoonful of the chicken mixture, and another slice of Havarti cheese.
  • Place remaining slices of bread on top, buttered side facing up.

Cook

  • Heat a skillet over medium heat and grill sandwiches for 3-5 minutes per side until golden brown and cheese is melted.
  • Remove from skillet, cut in half if desired, and serve hot.

Notes

Use leftover chicken for quicker prep. Cheese can be swapped for cheddar or mozzarella. Consider adding hot sauce for extra flavor.
