Instructions

Preparation

  • In a mixing bowl, mash the rinsed and drained black beans with a fork until mostly smooth.
  • Stir in the breadcrumbs, chopped onion, corn, cumin, garlic powder, salt, pepper, and egg until well combined.
  • Form the mixture into burger-sized patties, about 1 inch thick.

Cooking

  • Preheat a skillet over medium heat and add a tablespoon of oil.
  • Carefully place the patties in the skillet and cook for about 5-7 minutes on each side until heated through and golden.

Serving

  • Remove patties from the skillet and place on burger buns. Top with lettuce, tomato, and any additional toppings.

Notes

Customize seasonings with chili powder or smoked paprika. Make ahead and refrigerate or freeze for later. Baking option available at 375°F (190°C) for about 25-30 minutes.
