  • salt and pepper To taste for elevating the overall seasoning.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice the baguette into 1/2-inch rounds, place them on a baking sheet, drizzle with olive oil, and sprinkle lightly with salt.

Cooking

  • Roast the baguette slices in the oven for about 5 minutes, then flip them to crisp both sides.
  • In a small pan over medium heat, combine half the blackberries, balsamic vinegar, and rosemary. Simmer for about 5 minutes, mashing the berries slightly.
  • Remove from heat, discard the rosemary, and fold in the remaining whole blackberries.
  • In a bowl, mix the goat cheese, heavy cream, lemon zest, salt, and pepper until smooth.

Assembly

  • Spread the goat cheese mixture over each toasted baguette slice.
  • Top each piece with the blackberry mixture and garnish with a small piece of rosemary.

Notes

For extra flavor, drizzle honey over the crostini just before serving. Optionally, add chopped walnuts or pecans for crunch.
