Ingredients

Crust and Topping

  • 1.5 cups old-fashioned oats
  • 1 cup all-purpose flour
  • 0.5 cup brown sugar packed
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Fruit Filling

  • 2 cups blackberries plump and juicy
  • 2 pieces apples, peeled, cored, and diced into bite-sized pieces
  • 0.25 cup granulated sugar
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  • In a bowl, combine the oats, flour, brown sugar, baking powder, and salt. Mix in the melted butter and vanilla until crumbly.
  • Press two-thirds of the oat mixture into the bottom of the prepared baking dish to form the crust.

Cooking

  • In a saucepan over medium heat, combine the blackberries, diced apples, granulated sugar, chopped sage, lemon juice, and cornstarch. Cook for 5-7 minutes until the fruit is softened and the mixture thickens.
  • Spread the fruit mixture evenly over the oat crust in the baking dish.
  • Sprinkle the remaining oat mixture over the fruit filling.
  • Bake for 30-35 minutes until the top is golden brown.
  • Allow the bars to cool completely before cutting into squares.

Notes

For enhanced flavor, opt for organic ingredients and feel free to experiment with different fruits. Store leftover bars in an airtight container for up to 5 days at room temperature or refrigerate for about a week.
