  • 0.5 cups fresh or frozen blueberries Adds a burst of sweetness and vibrant color.
  • 1 tablespoon balsamic vinegar Contributes tanginess to balance the sweetness.
  • 1.5 tablespoons brown sugar Enhances the natural sweetness of the blueberries.
  • freshly ground black pepper To taste, adds a hint of warmth and depth.

Instructions

Preparation

  • In a small saucepan over medium heat, combine the blueberries, balsamic vinegar, and brown sugar. Stir occasionally, mashing the berries gently with a spoon or fork to release their juices. Simmer for about 5 minutes until slightly thickened.
  • Remove from heat and strain the mixture through a fine mesh strainer. Save the syrup for cocktails or drizzling over pancakes. Set the thickened blueberry mixture aside for the sandwich.

Assembly and Cooking

  • Spread the blueberry mixture onto one slice of bread. Layer half of the cheese, followed by the spinach or arugula, then add the remaining cheese. Sprinkle with freshly ground black pepper.
  • Place the second slice of bread on top.
  • Heat a skillet over medium heat. Place the sandwich in the pan and cook for 3–4 minutes per side, pressing slightly with a spatula until both sides are golden brown and crispy, and the cheese is melted.
  • Remove from the pan, let it rest for a minute, then slice and serve warm.

Notes

For extra depth of flavor, consider adding a hint of garlic powder or crushed red pepper flakes to the blueberry mixture before cooking. Optional: Add nuts for extra crunch or use a panini press for an evenly crisp sandwich.
