Ingredients

For the Filling

  • 150 g cream cheese, softened
  • 1/2 cup cream
  • 1 tsp vanilla extract
  • 2 tbsp caster sugar
  • 1/2 cup fresh or frozen blueberries

For the French Toast

  • 1 loaf day-old brioche
  • 1 tsp cinnamon
  • 1/2 cup milk
  • Butter for frying

Instructions

Preparation

  • In a mixing bowl, beat together cream cheese, caster sugar, and vanilla extract until smooth.
  • Gently fold in the blueberries.

Assembling

  • Slice the brioche into 8 thick slices.
  • Spread the cheesecake filling on half of the brioche slices, then top with remaining slices to create sandwiches.

Making the Custard

  • Whisk together egg, milk, cream, and cinnamon in a bowl until well blended.

Cooking

  • Dip each sandwich into the custard mixture, soaking for about 20 seconds on each side.
  • In a skillet, melt butter over medium heat and fry the soaked sandwiches for 3-4 minutes on each side until golden brown.

Serving

  • Remove from the pan and serve warm, topped with extra blueberries, icing sugar, and maple syrup.

Notes

Use day-old bread for better soaking. Experiment with different berries. Adjust sugar for sweetness. Adding zest can brighten flavors. Cook in batches for larger groups.
