Instructions

Preparation

  • Mix the graham cracker crumbs, melted butter, and sugar in a large bowl until well combined. Press into the bottom of a greased 9-inch springform pan and chill to set.
  • Combine blueberries, sugar, lemon juice, and cornstarch in a saucepan over medium heat. Cook until thickened, about 5-7 minutes, then let cool.
  • In a bowl, beat cream cheese, powdered sugar, lemon zest, egg, and vanilla until smooth and fluffy.

Assembly

  • Spoon half of the cooled blueberry mixture over the crust, then pour the cream cheese filling on top. Swirl in the remaining blueberry mixture.
  • Mix the flour, brown sugar, and cinnamon for the crumble. Add cold butter and mix until crumbly. Sprinkle over the cake.

Baking

  • Preheat oven to 325°F (160°C) and bake for 45-50 minutes until the center is set and the top is golden brown.
  • Let cool at room temperature, then refrigerate for at least 4 hours before serving.
