Instructions

Preparation

  • Preheat the oven to 325°F (163°C) and line a 9x9-inch baking pan with parchment paper.
  • For the crust, combine graham cracker crumbs, sugar, and melted butter in a bowl until fully coated. Press firmly into the bottom of the lined pan and bake for 10 minutes. Set aside to cool.

Cheesecake Filling

  • In a large bowl, beat softened cream cheese with granulated sugar until smooth. Add in vanilla extract, eggs, orange zest, and orange juice; mix until well blended.
  • Gently fold in fresh blueberries, being careful not to crush them.

Baking

  • Pour the cheesecake mixture over the cooled crust and spread evenly. Bake for 25-30 minutes, until edges are set and the center has a slight jiggle.
  • Let cool to room temperature, then refrigerate for at least 2 hours to firm up.
