Instructions

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in the fresh blueberries.

Cooking

  • Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet.
  • Cook until bubbles form on the surface, then flip and cook until both sides are golden brown.

Making Ganache and Sauce

  • In a microwave-safe bowl, heat chocolate chips and heavy cream in 30-second intervals until smooth.
  • In a small saucepan, combine mixed berries, sugar, and water. Cook until the berries break down and the sauce thickens.

Serving

  • Stack pancakes, drizzle with chocolate ganache and berry sauce, and enjoy!

Notes

For fluffier pancakes, let the batter rest for 5-10 minutes before cooking. You can substitute dark chocolate for a richer ganache. Customize the berries in the sauce based on your preference.
