  • 1/2 teaspoon baking soda Gives that extra fluffiness.
  • 1/4 teaspoon salt Balances all the sweet flavors.
  • 1 cup buttermilk Macerates the pancakes, making them incredibly tender.
  • 1 large egg The binding agent that ties everything together.
  • 2 tablespoons unsalted butter, melted Adds richness and flavor.
  • 1 teaspoon vanilla extract A burst of aromatic warmth!
  • 1/2 cup fresh blueberries Bursting with juices that enhance each bite.

Chocolate Ganache

  • 1/2 cup semi-sweet chocolate chips Rich chocolate goodness for the ganache.
  • 1/4 cup heavy cream Makes the ganache silky and smooth.

Berry Sauce

  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries) A colorful and fruity topping.
  • 2 tablespoons sugar Sweetens the berry sauce perfectly.
  • 1 tablespoon water Helps to simmer down the berry sauce.

Instructions

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until no lumps remain.
  • In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined, leaving a few lumps.
  • Gently fold in the fresh blueberries.

Cooking

  • Heat a non-stick skillet or griddle over medium heat and pour 1/4 cup of batter for each pancake.
  • Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook until golden brown (about another 2 minutes).

Making the Ganache

  • In a microwave-safe bowl, heat the chocolate chips and heavy cream in 30-second intervals, stirring until smooth.

Making the Berry Sauce

  • In a small saucepan, combine the mixed berries, sugar, and water.
  • Cook over medium heat until the berries break down and the sauce thickens (about 5-7 minutes).

Serving

  • Serve the blueberry pancakes warm, drizzled with chocolate ganache and topped with the berry sauce.

Notes

Use fresh blueberries for the best flavor; frozen ones can make the batter watery. For fluffier pancakes, separate the egg yolk and white. Beat the white until peaks form, then fold into the batter. Consider adding powdered sugar on top for presentation!
