Instructions

Preparation

  • Season the beef short ribs generously with salt and pepper on all sides.
  • Heat the ghee or butter in a heavy pot or Dutch oven over medium-high heat until shimmering.
  • Add the ribs and sear them on all sides until browned (about 12–15 minutes), then remove and set aside.

Cooking

  • In the same pot, add the sliced onion and minced garlic; sauté for 2–3 minutes until fragrant.
  • Deglaze the pot with balsamic vinegar and coconut aminos, scraping up any browned bits.
  • Stir in the tomato paste and flour until smooth.
  • Gradually whisk in the beef broth to create a rich sauce.
  • Return the seared ribs to the pot, add thyme and bay leaf, cover, and place in the oven.
  • Bake at 350°F for about 2 hours. Remove thyme and bay leaf before serving.

Notes

You can marinate the ribs a day before for enhanced flavors. Consider thickening the sauce with cornstarch if desired.
