Ingredients

For the Bruschetta Mix

Instructions

Preparation of Bruschetta Mix

  • In a large bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, and black pepper. Mix well to coat each ingredient. Cover the bowl and refrigerate.

Cooking the Spaghetti

  • Bring a large pot of salted water to a boil, add spaghetti and cook according to package instructions until al dente. Reserve 1 cup pasta water, then drain and set aside.

Cooking the Chicken

  • In a large skillet, heat 1 tablespoon olive oil over medium heat. Add diced chicken, season with Italian seasoning, salt, and black pepper. Sauté until cooked through and golden brown, about 7-10 minutes. Remove from skillet.

Combining the Ingredients

  • In the same skillet, add remaining tablespoon of olive oil. Stir in the chilled tomato mixture and cook for about 1 minute to warm through.
  • Add the cooked spaghetti and chicken back into the skillet with the tomato mixture, tossing everything together. Add reserved pasta water as needed for desired consistency.

Serving

  • Plate the Bruschetta Chicken Pasta and top with grated Parmesan cheese, drizzling with balsamic glaze if desired. Serve warm and enjoy!

Notes

For more depth of flavor, marinate diced chicken in olive oil, Italian seasoning, and garlic for at least 30 minutes before cooking. Customize with other vegetables like spinach or bell peppers. Substitute with whole wheat or gluten-free pasta if desired.
