Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Spread the chopped pecans on a baking sheet and toast them for about 6–8 minutes until fragrant. Allow them to cool.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, beat the room-temperature butter, granulated sugar, and brown sugar until creamy and fluffy, about 3 minutes.
  • Mix in the eggs one at a time, ensuring each is fully incorporated. Then, beat in the vanilla extract until smooth.
  • Gradually add the dry mixture into the wet mixture, mixing until just combined. Fold in the cooled, toasted pecans.
  • Scoop the dough into 1.5 tablespoon-sized balls and place them onto a baking sheet. Chill the dough in the refrigerator for 30 minutes.

Baking

  • Bake the chilled cookies on a lined baking tray for 10–12 minutes or until the edges turn golden and the centers are just set.
