Instructions

Caramelize the Onions

  • Heat olive oil and butter in a skillet over medium-low heat. Add sliced onions and pinch of salt. Cook for 20-25 minutes, stirring frequently, until golden brown.
  • Remove from heat and set aside.

Make the Meatball Mixture

  • In a large bowl, combine ground beef, grated onion, minced garlic, breadcrumbs, egg, salt, pepper, and smoked paprika. Mix gently until just combined.

Form the Meatballs

  • Take a small portion of the meat mixture, flatten it, place a piece of blue cheese in the center, and wrap the meat around it. Shape into a ball. Repeat until all mixture is used.

Cook the Meatballs

  • In the same skillet, add a little oil and heat over medium. Cook meatballs for 3-4 minutes on each side until browned. Cover and cook an additional 5 minutes until fully cooked through.

Assemble and Serve
