Instructions

Preparation

  • Preheat your oven to 175°C (350°F). Prepare an 8-inch round or square baking pan by greasing it and lining it with parchment paper to avoid sticking.
  • In a large mixing bowl, combine the dry ingredients: flour, rolled oats, baking powder, baking soda, salt, ground cinnamon, and nutmeg. Whisk them together to ensure even distribution.
  • In a separate bowl, beat the eggs with both sugars until smooth and creamy. Next, add in the oil, yogurt, and vanilla extract, whisking them together until you achieve a cohesive mixture.
  • Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid overmixing to ensure a light and fluffy cake texture.
  • Fold in the grated carrots, raisins, and nuts (if included). This step adds texture and bursts of flavor to the cake.

Baking

  • Pour the batter into your prepared pan, smoothing the top with a spatula.
