  • 1 medium Vidalia onion, chopped
  • 1 small green cabbage, chopped
  • 8 tbsp butter
  • 1 can (10 oz) cream of chicken or cream of mushroom soup
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, melt the butter over medium heat.
  • Add the chopped onion and cabbage to the butter, cooking for about 10 to 12 minutes, or until the vegetables are soft and slightly golden.
  • Stir in the can of cream soup, adding salt and pepper to taste. Mix everything well.
  • Transfer the mixture to a greased baking dish, spreading it evenly.
  • Top with the shredded cheddar cheese.
  • Bake uncovered for 25-30 minutes, or until the cheese is bubbly and lightly browned.
  • Let the casserole cool for a few minutes before serving warm.

Notes

For richer flavor, sauté the onions until deeply caramelized. You can enhance the casserole with extras like cooked bacon, herbs, or red pepper flakes. Substitute with low-fat cheese or cream soup for a lighter version.
