Instructions

Preparation

  • Preheat your oven to 400°F (200°C), lining a baking tray with foil or using an oven-safe skillet.
  • Bring a large pot of water to a boil. Cook the corn for 5–6 minutes until slightly tender, then drain and set aside.
  • In a bowl, combine the melted butter with minced garlic, chopped parsley, salt, and smoked paprika. Mix well to create a flavorful garlic butter.

Baking

  • Place the cooked corn on your baking tray and brush each cob generously with the garlic butter mixture.
  • Sprinkle the shredded cheese blend generously over each buttered corn cob.
  • Bake in the preheated oven for about 10 minutes, then switch to the broil setting for an additional 2–3 minutes until the cheese bubbles and is golden.
  • Once finished, sprinkle additional parsley on top for freshness before serving hot.
  • Optionally, serve with lime wedges for added zest.

Notes

For best results, use fresh corn. Consider adding cayenne pepper for a kick. Store leftovers in an airtight container for up to 3 days.
