Ingredients

For the chicken rolls

For the sauce

  • 2 tbsp butter To start your creamy sauce.
  • 1 tbsp flour Helps to thicken the sauce beautifully.

Seasoning and garnish

Instructions

Preparation

  • Butterfly each chicken breast to approximately 1/2 inch thick for even cooking.
  • Season both sides of the chicken breasts with salt, black pepper, and Italian seasoning.

Sauté the Mushrooms

  • In a skillet over medium heat, melt 2 tablespoons of butter and add minced garlic. Sauté for about 30 seconds until fragrant.
  • Add the sliced mushrooms, salt, and thyme. Cook until the mushrooms are browned and tender, about 5-6 minutes. Let the mixture cool slightly.

Assemble the Rolls

  • Lay the butterflied chicken breasts flat and spoon a generous amount of the mushroom mixture onto each breast.
  • Sprinkle with mozzarella and Parmesan cheese. Roll the chicken tightly and secure with toothpicks.

Sear the Chicken

  • Heat 2 tablespoons of olive oil in the skillet over medium-high heat. Sear the chicken rolls seam-side down until golden brown on all sides, about 8-10 minutes. Remove from skillet and set aside.

Make the Sauce

  • Reduce heat to medium, melt 2 tablespoons of butter in the same skillet. Add 1 tablespoon of flour and whisk to form a roux.
  • Gradually add chicken broth, whisking continuously to avoid lumps. Stir in heavy cream and let simmer until slightly thickened.
  • Add the remaining mozzarella cheese and season with salt and pepper. Allow it to melt into the sauce.

Bake & Finish

  • Preheat your oven to 375°F (190°C). Place the seared chicken rolls in a baking dish and pour the creamy sauce over them.
  • Bake uncovered for 20-25 minutes, or until the chicken is thoroughly cooked and bubbly. Garnish with fresh parsley before serving.

Notes

Pound the chicken evenly to ensure thorough cooking. Experiment with different mushrooms. Allow the chicken to rest before slicing.
