  • 8 pieces lasagna noodles soft and pliable, for rolling

Vegetable Filling

  • 1 tablespoon olive oil for cooking
  • 1 small onion, finely diced adds sweetness and depth
  • 3 cloves garlic, minced for aromatic warmth
  • 1 cup mushrooms, chopped earthy and meaty texture
  • 2 cups fresh spinach, chopped vibrant greenery
  • 1/2 teaspoon salt for seasoning
  • 1/4 teaspoon black pepper for warmth
  • 1 cup vegan ricotta for creamy filling

Toppings

  • 1 cup marinara sauce for encasing the rolls
  • 1/2 cup vegan mozzarella, shredded for creamy finish

Instructions

Preparation

  • Preheat your oven to 375°F (190°C). Begin cooking your lasagna noodles according to the package instructions. Once cooked, drain and set aside, allowing them to cool slightly.
  • In a large pan, heat the olive oil over medium heat. Add the finely diced onion and minced garlic, sautéing for 2-3 minutes until the onion is translucent.
  • Add the chopped mushrooms and spinach, cooking for another 3-4 minutes. Season the mixture with salt and pepper to taste.
  • In a mixing bowl, combine the sautéed vegetables with the vegan ricotta, stirring until well-mixed.

Assembly

  • Lay each cooked noodle flat on a clean surface. Spread a generous layer of the ricotta mixture over each noodle and roll them up gently.
  • Pour a layer of marinara sauce into a baking dish. Arrange the lasagna rolls seam side down in the dish, then pour more marinara sauce on top. Sprinkle the shredded vegan mozzarella generously over the top.

Baking

  • Bake in the preheated oven for 20 minutes. Once baked, let the rolls cool for a few minutes before garnishing with fresh basil or nutritional yeast.

Notes

For extra creaminess, blend in a splash of vegan milk with the ricotta mixture. Adjust the ingredients based on your preferences to create delightful variations.
