Ingredients

For the Pasta

For the Sauce

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, toss the halved cherry tomatoes with olive oil, minced garlic, salt, and pepper.
  • Spread the tomato mixture on a lined baking sheet and roast for about 20 minutes.
  • Slice the chicken breasts in half horizontally and season with salt, paprika, and Italian seasoning.

Cooking

  • Heat olive oil in a large skillet over medium-high heat and cook the chicken for about 5 minutes per side.
  • Remove the chicken from heat and slice thinly.
  • In the same skillet, add lemon slices, minced garlic, and butter, and cook until fragrant.
  • Boil spaghetti according to package directions; drain and return to skillet with the lemon garlic butter.

Assembly

  • Top the pasta with the sliced chicken, roasted tomatoes, and tear Burrata cheese over it.
  • Sprinkle with fresh basil and toasted pine nuts. Serve immediately.

Notes

For a spicier dish, add red pepper flakes. You can also swap chicken for sautéed mushrooms or zucchini for a vegetarian option. Great with garlic bread.
