Instructions

Preparation

  • In a small bowl, dissolve the instant coffee powder in hot water. Set aside to cool.
  • In a mixing bowl, whip the heavy cream together with the powdered sugar and vanilla extract until stiff peaks form.
  • In a microwave-safe bowl, melt the dark chocolate, milk chocolate, and butter in short bursts, stirring until smooth.
  • Mix the chocolate cookie crumbs with the melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan to create a sturdy crust.

Assembly

  • Fold the cooled coffee mixture into the whipped cream until fully incorporated.
  • Gently fold in the melted chocolate mixture to achieve a smooth, airy mousse.
