Ingredients

For the Crust

Instructions

Preparation

  • Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a mixing bowl, combine Oreo crumbs and melted butter; mix until crumbs are coated. Press into the bottom of the prepared pan.

Baking

  • Bake the crust for 10 minutes, then cool.
  • Beat cream cheese until smooth, then gradually add sugar. Incorporate sour cream and vanilla, mixing thoroughly.
  • Add eggs one at a time, mixing after each. Mix in blue food coloring and fold in mini chocolate chip cookies.
  • Pour batter over cooled crust and bake for 60-70 minutes, until center is slightly wobbly.
  • Turn off the oven and leave the cheesecake inside for one hour to cool.

Chilling and Decorating

  • Refrigerate the cheesecake for at least 4 hours, preferably overnight.
  • Combine white chocolate chips and heavy cream in a microwave-safe bowl and heat until smooth.
  • Drizzle ganache over the chilled cheesecake. Decorate with whipped cream, mini cookies, blue food coloring drops, and googly eyes.

Notes

Ensure all ingredients are at room temperature for best results. Use a water bath to prevent surface cracks and allow cooling in the oven.
