Instructions

Preparation

  • Preheat your waffle iron as directed.
  • In a mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the buttermilk, melted butter, and egg until well combined.
  • Slowly combine both mixtures, stirring until just mixed.

Cooking

  • Lightly grease the waffle iron. Add 1–2 tablespoons of batter per section in the waffle iron.
  • Cook for 3–4 minutes or until the bites turn crisp and golden brown.
  • Once ready, let them cool slightly on a wire rack.
  • Preheat your oven to 350°F (175°C). Place the cooked waffles on a baking sheet and sprinkle generously with smoked Gouda.
  • Bake for 3–5 minutes until the cheese melts beautifully over the waffles.
  • Drizzle with honey and garnish with fresh herbs like thyme or rosemary if desired. Serve warm.

Notes

To elevate your cornbread waffle bites, add a pinch of chili powder for heat or substitute some all-purpose flour with whole wheat flour. Keep your waffle bites crispy by ensuring your waffle iron is adequately heated. Store leftovers in an airtight container in the fridge for up to 3 days.
