Instructions

Preparation

  • Preheat your oven to 200°C (390°F).
  • Prepare the cherry tomatoes: Toss them in a mixing bowl with olive oil and balsamic vinegar. Place them on a baking sheet and roast for 20 minutes.
  • Blend your cottage cheese mixture: In a food processor, combine the cottage cheese, egg, flour, baking powder, salt, and pepper. Pulse until smooth.

Baking

  • Pour the cottage cheese mixture onto a parchment-lined baking tray, shaping it into a round or oval.
  • Bake for 20–25 minutes until golden and firm to the touch.
  • Cool slightly before topping with torn burrata and roasted tomatoes.

Finishing Touches

  • Drizzle with pesto and scatter fresh basil leaves on top. Add chili flakes or sea salt if desired.
