Ingredients

For the Sweet Potatoes

For the Cowboy Caviar

  • 1 cup Black beans (drained and rinsed) Earthy and protein-packed, they offer a hearty contrast to the dish.
  • 1 cup Corn kernels (grilled, canned, or frozen) Sweet and juicy, they introduce a delightful crunch.
  • 1/2 each Red bell pepper, diced Crisp and slightly sweet, it adds a pop of color and flavor.
  • 1/2 each Yellow bell pepper, diced Its vivid hue complements the red pepper, enriching texture and taste.
  • 1/2 small Red onion, finely chopped Sharp and tangy, it elevates the entire dish with its aromatic bite.
  • 1 each Jalapeño, minced (optional) Adds a spicy kick for those seeking heat.
  • 1 medium Tomato, diced and seeded Juicy and fresh, it brings brightness and moisture.
  • 1 each Juice of lime Bright and zesty, it elevates and marries all the flavors.

To Serve

Instructions

Preparation

  • Preheat your oven to 200°C (400°F). Scrub the sweet potatoes until they gleam, prick holes with a fork to let steam escape, and rub each potato with a coat of olive oil.
  • Place the sweet potatoes on a baking tray and roast for 45–60 minutes until tender.
  • In a large bowl, mix together the black beans, corn, diced red and yellow bell peppers, chopped red onion, minced jalapeño, and diced tomato. Add lime juice and olive oil, then toss gently.
  • Chill the cowboy caviar mixture in the refrigerator to allow the flavors to meld.

Assembly

  • Once sweet potatoes are roasted and slightly cooled, slice them open lengthwise and fluff the flesh with a fork, seasoning lightly with salt.
  • Spoon the chilled cowboy caviar generously over each potato, allowing it to overflow.
  • Top with a dollop of Greek yogurt or sour cream, and garnish with extra cilantro or sliced avocado if desired. Serve warm and enjoy!

Notes

For a low-carb version, substitute sweet potatoes with zucchini boats. Consider adding seasonal vegetables to the cowboy caviar for freshness.
