Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or a baking dish.
  • In a large mixing bowl, beat the eggs until well-combined. Gradually stir in the milk until blended thoroughly.
  • Add the crushed Ritz crackers and allow them to absorb the liquid for a few minutes.
  • Toss in the chopped onion and shredded cheddar cheese, stirring until evenly combined.
  • Gently fold in the ground beef, being careful not to overwork the mixture.
  • Shape the mixture into a loaf and place it in your prepared dish.

Baking

  • Bake for 45 minutes.
  • Meanwhile, combine the ketchup, brown sugar, and mustard in a small bowl, whisking until smooth.
  • After 30 minutes, take the meatloaf out of the oven and spread half of the glaze over the top.
  • Return it to the oven and bake for an additional 10 minutes.
  • Add the remaining glaze and bake for another 5-10 minutes, until the internal temperature reaches 160°F (71°C).
  • Allow the meatloaf to rest for 10 minutes before slicing.

Notes

For variations, consider adding chopped bell peppers or mushrooms, and try mixing different cheeses for unique flavors. The dish can be made in advance, stored in the fridge, and reheated beautifully.
