Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  • In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  • In a large bowl, cream the butter and sugar together until the mixture becomes light and fluffy—about 3-4 minutes with a hand mixer.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the orange zest, orange juice, and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry mixture.
  • Fold in the dried cranberries, allowing them to disperse evenly through the batter.
  • Divide the batter evenly between the two prepared cake pans and smooth the tops.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Glazing
