Casserole Base

Corn and Cheese

  • 4 cups sweet corn (fresh, frozen or canned & drained) The star ingredient, offering sweetness.
  • 1 cup shredded mozzarella or Monterey Jack cheese Adds melty texture.
  • 1/4 cup grated Parmesan (optional for topping) For additional flavor.

Instructions

Preparation

  • Preheat the oven to 375°F (190°C) and lightly grease a medium baking dish.
  • In a large bowl, combine cream cheese, sour cream, melted butter, garlic powder, onion powder, salt, and black pepper until smooth.
  • Fold in the corn and shredded cheese until evenly mixed.

Baking

  • Pour the mixture into the prepared baking dish, spreading it evenly and adding more mozzarella and optional Parmesan on top.
  • Bake uncovered for 25–30 minutes until golden brown and bubbly.
  • Broil for an additional 2–3 minutes for extra browning if desired, watching closely to avoid burning.
  • Let cool for 5 minutes before serving.

Notes

Leftovers can be stored in the refrigerator for up to 3 days. Can be assembled a day in advance and refrigerated.
