Instructions

Preparation

  • Preheat oven to 375°F (190°C) for even baking.
  • Lightly season both sides of the chicken breasts with salt and pepper, then coat them in flour.
  • In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Brown the chicken for 3–4 minutes on each side until golden.
  • Carefully transfer the chicken to a 9x13 inch baking dish.
  • In the same skillet, add another tablespoon of butter and sauté the sliced mushrooms until brown and liquid has evaporated, about 5 minutes.
  • Add mushrooms into the baking dish with the chicken.
  • Melt the remaining 2 tablespoons of butter in the skillet. Stir in minced garlic and the remaining flour, cooking for about a minute.
  • Gradually pour in the dry sherry and whisk in the heavy cream, stirring until the sauce thickens slightly.
  • Season the sauce with salt and pepper to taste.
  • Pour the sauce over the chicken and mushrooms in the baking dish.
  • Top with slices of Muenster cheese, covering the mixture generously.
  • Cover the dish with foil and bake for 20 minutes.
  • Uncover the dish and broil for a few minutes until the cheese is golden and bubbly.
  • Let the dish rest briefly before serving.

Notes

For extra flavor, consider marinating the chicken in garlic, herbs, and lemon juice before cooking. Feel free to add spinach or other veggies for added nutrition.
