Instructions

Preparation

  • Season the salmon fillets liberally with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the salmon skin-side up for about 5 minutes.
  • Flip the salmon and cook until done to your preference. Remove the salmon from the pan and set aside.

Sauté the Aromatics

  • In the same skillet, melt butter over medium heat. Add diced garlic and sauté for about 1 minute until fragrant.
  • Stir in roasted red peppers and cook for 2 minutes to soften.

Add the Spinach

  • Incorporate the baby spinach, stirring until wilted, about 2-3 minutes.

Prepare the Creamy Sauce

  • Reduce heat and pour in half & half or heavy cream. Mix in grated Parmesan, chopped parsley, red pepper flakes (if using), salt, and black pepper.
  • Stir until smooth and creamy for about 2-3 minutes.

Combine and Heat Through

  • Return the salmon to the pan, spooning the creamy sauce over each piece. Heat through for a couple of minutes.

Notes

Consider adding lemon juice or zest for brightness. For a thicker sauce, let it simmer longer. Be mindful of the cooking time for salmon to avoid overcooking.
