Instructions

Preparation

  • In a microwave-safe bowl, combine the semi-sweet chocolate chips, milk chocolate chips, and butter. Microwave in 30-second intervals, stirring after each, until the mixture is completely smooth and fully melted. Be cautious not to overheat as it may cause the chocolate to seize.
  • Once melted, stir in the vanilla extract and the crispy rice cereal. Gently fold the cereal into the chocolate to ensure each piece is evenly coated without crushing them.

Setting

  • Prepare an 8x8-inch pan by lining it with parchment paper. Pour the chocolate-rice mixture into the pan, spreading it evenly. Tap the pan on the counter lightly to remove any air pockets and create a compact mixture.
  • Place the pan in the refrigerator and chill for at least 1 hour, or until the mixture is completely firm to the touch.
  • Once set, remove the parchment paper from the pan and cut the chocolate mixture into bars or squares.

Serving

  • Enjoy the bars immediately or store any leftovers in an airtight container in the refrigerator for up to one week.

Notes
