  • 1 small cucumber, thinly sliced Crisp and refreshing.
  • 1 tbsp lemon juice Brightens up the flavors.
  • 1/4 cup Greek yogurt Acts as the base for our dressing.
  • 1 tbsp chopped fresh dill or mint Adds aromatic notes.
  • 1 tsp olive oil Enhances richness and provides golden color when toasted.
  • to taste Salt and pepper Essential for balancing flavors.
  • 1 handful baby spinach or arugula Optional; adds extra nutrients and freshness.

Instructions

Preparation

  • Stir together the Greek yogurt, lemon juice, olive oil, dill (or mint), salt, and pepper in a small bowl until smooth and creamy.
  • Lay the tortillas flat on a clean surface and spread the yogurt mixture over two-thirds of each tortilla.
  • Top the yogurt layer with cucumber, crumbled feta, and optional spinach or arugula.
  • Fold the bottom of the tortilla up, then fold the sides in, and roll tightly from the bottom to secure the fillings.

Cooking

  • Preheat a skillet over medium heat and drizzle a little olive oil.
  • Place the wraps seam-side down and toast for approximately 2–3 minutes per side, until golden brown and crispy.

Serving

  • Let the wraps cool slightly before cutting into halves or quarters and serve immediately.

Notes

For variations, try different herbs or add bell peppers for extra crunch. Store any leftovers in an airtight container in the refrigerator for up to two days.
