Ingredients

  • 2 tbsp Greek yogurt (optional) For a creamier texture.
  • 2 tbsp melted butter or olive oil For brushing, ensures crispiness.
  • 1 tsp dried oregano Enhances the Mediterranean flavor.
  • 1/2 tsp black pepper Adds a subtle bite.

For the Spicy Honey

  • 1/4 cup honey Sweet and golden.
  • 1/2 tsp red pepper flakes Adjust to taste.
  • 1/2 tsp lemon juice Adds brightness.
  • 1 tbsp toasted sesame seeds For garnish.

Instructions

Preparation

  • In a mixing bowl, combine the crumbled feta cheese, Greek yogurt (if using), dried oregano, and black pepper.
  • Preheat your oven to 375°F (190°C).
  • On a clean surface, lay down a sheet of phyllo dough, brushing it lightly with melted butter or olive oil.
  • Repeat layering with a second sheet, adding more melted butter or oil.
  • Place a generous spoonful of the feta mixture at one end of the phyllo sheet, then roll tightly like a cigar, folding in the sides to seal the filling.

Baking

  • Arrange the rolls seam-side down on a parchment-lined baking sheet and brush the tops with extra melted butter or oil.
  • Bake for 15-18 minutes or until golden brown and crispy.

Making the Spicy Honey

  • Combine the honey, red pepper flakes, and lemon juice in a small saucepan and gently heat for 2-3 minutes.

Serving

  • Drizzle the warm spicy honey over the baked phyllo rolls and sprinkle with toasted sesame seeds and fresh herbs.

Notes

Keep phyllo covered to prevent drying out. Adjust red pepper flakes to control spice level.
