Instructions

Preparation

  • In a deep pan or fryer, heat the vegetable oil to 350°F (175°C).
  • In a mixing bowl, whisk together the flour, baking powder, salt, and any optional spices.
  • Slowly pour in the cold beer, whisking until it forms a smooth batter that’s slightly thick, resembling pancake batter. Allow it to rest for about 10 minutes.
  • Lightly coat each fish fillet in plain flour to help the batter stick.

Cooking

  • Dip each floured fillet into the batter, coating it fully.
  • Carefully lower the fish into the hot oil and fry for 5 to 7 minutes, turning once, until golden brown and crispy on both sides.
  • Remove the fish with a slotted spoon and place it on a wire rack or paper towels to drain excess oil.
