Ingredients

For the Feta Sticks

  • 2 tbsp honey Sweet and rich, providing a luscious drizzle at the finish.

Instructions

Preparation

  • Begin your culinary journey by cutting the firm block of feta into thick sticks, around 6 to 8 pieces. Gently pat them dry with paper towels to remove any excess moisture, ensuring a crispy finish.
  • Create your assembly line. In one bowl, pour the all-purpose flour; in a second, whisk the beaten egg, and in a third, combine the panko breadcrumbs with crushed pistachios.
  • Take one feta stick and dip it in the flour, covering it lightly, then move it into the beaten egg. Lastly, roll it in the panko-pistachio mixture, pressing down to ensure a good coating. Repeat this for all sticks.
  • Arrange the coated sticks on a plate, and place them in the fridge for 15 to 20 minutes to allow the coating to adhere better.

Cooking

  • Preheat your air fryer to 200°C (400°F) and lightly spray the sticks with neutral oil.
  • Arrange the sticks in the air fryer basket, ensuring they are spaced out for proper air circulation. Air-fry for 6 to 8 minutes, turning halfway through, until they are beautifully golden and crisp.

Assembly

  • While the feta sticks are crisping, gently warm the honey in a small saucepan. Stir in the chili flakes and a pinch of salt.
  • Once the feta sticks are ready, drizzle the hot honey over them while they are still warm, sprinkle with additional crushed pistachios, and add fresh thyme or mint leaves.

Notes

Pat the feta dry before coating; this will help breadcrumbs attach better. Ensure an even coating of the panko-pistachio mixture by pressing firmly as you roll. Don’t skip the chilling step; it firms up the sticks to prevent breakage during air frying.
