Ingredients

Filling

  • 150 g whipped feta Can substitute with a blend of feta and Greek yogurt.
  • 2 tbsp finely chopped roasted pistachios
  • 1 tbsp fresh mint, finely chopped Adds a refreshing contrast.

  • 6–8 sheets rice paper Thin and transparent.

Instructions

Preparation

  • Combine the whipped feta, finely chopped pistachios, chopped mint, lemon zest, and black pepper in a mixing bowl. Stir until creamy and well integrated.
  • Fill a shallow dish with warm water and dip each rice paper sheet for about 5–10 seconds until soft but not overly fragile. Let excess water drip off.

Filling and Wrapping

  • Place a softened rice paper on a clean surface. Spoon about 1.5 tablespoons of the creamy filling into the center.
  • Fold the sides over the filling, then roll from the bottom up to form a small parcel, ensuring it is tightly wrapped.

Cooking

  • For air frying, preheat the air fryer to 200°C (392°F) and cook the parcels for 6–8 minutes until golden and glassy.
  • For pan-frying, heat olive oil in a skillet over medium heat. Fry the parcels until crispy and golden on both sides.
  • Serve warm with lemon wedges, hot honey, or a yogurt-herb dip.

Notes

Ensure rice paper is softened adequately but not too mushy. Avoid overfilling to seal snugly, and watch their color while frying to prevent burning.
