Frying

Instructions

Prepare the Filling

  • Heat a tablespoon of olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant.
  • Add finely chopped spinach and wilt for 2-3 minutes.
  • Remove from heat and fold in feta, ricotta, dill, lemon zest, nutmeg, salt, and black pepper. Allow to cool slightly.

Make the Dough

  • In a bowl, whisk together cornmeal, flour, baking powder, salt, black pepper, oregano, and smoked paprika.
  • Add egg, buttermilk, and melted butter. Mix until you get a thick, spoonable consistency.

Assemble the Fritters

  • Take about 2 tablespoons of dough, flatten in your palm, and place 1 tablespoon of filling in the center.
  • Carefully cover the filling with dough and seal the edges to form a fritter.

Fry Until Golden & Crispy

  • Heat vegetable oil in a pan over medium heat. Drop fritters into the oil and fry for 2-3 minutes on each side until golden brown.
  • Drain on paper towels to remove excess oil.

Serve & Enjoy

  • Serve warm with Greek yogurt or tzatziki and garnish with extra feta or fresh herbs.

Notes

Use fresh spinach for the best flavor. Don't overcrowd the pan when frying and ensure the oil is at the right temperature.
