Instructions

Preparation

  • In a large mixing bowl, combine mashed roasted sweet potato, grated Parmesan, egg, smoked paprika, garlic powder, and season with salt and black pepper. Stir until mixture is firm enough to hold its shape.
  • Loosely cover the bowl and chill the mixture in the refrigerator for 15 minutes.

Whipped Feta Preparation

  • In a food processor or blender, combine crumbled feta cheese, Greek yogurt, olive oil, and lemon zest. Blend until smooth, then season with black pepper.

Shaping and Frying

  • Once chilled, roll the sweet potato mixture into small balls and coat lightly with panko breadcrumbs.
  • In a deep skillet, heat neutral oil over medium heat and fry the sweet potato balls in batches until golden and crispy, about 3-4 minutes. Drain on paper towels.

Serving

  • Spread a generous swoosh of whipped feta on a serving plate, place crispy sweet potato balls on top, and drizzle with honey. Garnish with toasted panko crumbs and microgreens or thyme.
