Instructions

Preparation

  • Add the boneless, skinless chicken breasts, chicken broth, diced tomatoes, diced onion, minced garlic, Italian seasoning, salt, and black pepper to your crock pot. Stir to ensure the chicken is well-coated.
  • Cover the pot and set it to cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender enough to shred.
  • Once done, remove the chicken and shred it using two forks. Return the shredded chicken to the pot and mix well.
  • Stir in the heavy cream and grated Parmesan cheese. Allow the soup to cook for an additional 20-30 minutes.
  • Ladle the soup into bowls and garnish with extra Parmesan cheese and fresh basil.

Notes

For a spicier soup, add red pepper flakes. For a creamier version, consider blending a portion of the soup.
