Instructions

Caramelize the Onions

  • Melt 2 tablespoons of unsalted butter together with 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add 2 large, thinly sliced onions and stir occasionally, allowing them to cook for about 15-20 minutes until golden brown.
  • Sprinkle in 1/2 teaspoon of salt and 1/2 teaspoon of sugar (if desired), and pour in 1/2 cup of beef broth.
  • Continue to simmer until the liquid has been absorbed.

Prepare the Meatloaf

  • In a large mixing bowl, combine 2 lbs of ground beef, 1 cup of breadcrumbs, 1 packet of French onion soup mix, 1/2 cup of milk, 1 large egg, 2 tablespoons of Worcestershire sauce, 1/2 teaspoon of black pepper, and 1/2 teaspoon of garlic powder.
  • Gently mix the ingredients using your hands, being careful not to overwork the mixture.

Slow Cook the Meatloaf

  • In the last 10 minutes of cooking, top the meatloaf with 8 oz of Swiss cheese.
