Ingredients

Puff Pastry Base

  • 1 sheet puff pastry (250 g), thawed Crisp, flaky pastry serves as the perfect base.
  • 1 egg beaten (for egg wash) Helps create a beautiful sheen on the pastry.
  • 1 tbsp sesame seeds or poppy seeds Optional for decoration.

Filling

  • 1 whole burrata (approx. 125–150 g) Creamy and rich, bursting with milky goodness.
  • 2 pieces ripe peaches, sliced into wedges Brings smoky sweetness after grilling.
  • 1 tsp olive oil For grilling the peaches.
  • 1 pinch salt Elevates all the flavors in the dish.
  • 40 g roasted pistachios, roughly chopped Adds crunch and flavor.
  • 1–2 tbsp balsamic glaze Adds a sweet and tart finish.

Garnish (optional)

  • to taste fresh basil or thyme Adds brightness and freshness.

Instructions

Preparation

  • Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
  • Shape the thawed puff pastry into a rough circle on the tray, cutting a small circle from the center to form the wreath shape.
  • Crimp the outer edges slightly for added texture and brush with beaten egg. Optionally, sprinkle sesame or poppy seeds on top.

Baking

  • Bake in the preheated oven for 20–25 minutes until golden brown.
  • Allow the pastry to cool slightly before proceeding.

Grilling Peaches

  • Heat a grill pan with olive oil over high heat and grill the peach wedges for 2–3 minutes per side.

Assembly

  • Nestle the burrata in the center of the cooled pastry and let it ooze out.
  • Artfully arrange the grilled peaches over the pastry and sprinkle with pistachios.
  • Drizzle balsamic glaze over the top.

Serving

  • Serve immediately by slicing through the pastry.

Notes

Watch the pastry carefully while it bakes to avoid burning. You can prepare the puff pastry ahead of time but bake it just before serving for the best texture.
